Which Anime Vanguards element is best?

There is no single best element. Curse helps boss damage, Blast helps damage-reduction checks, Unbound helps critical routes, and Spark, Nature, Water, Holy, Cosmic, Fire, and Passion solve different team problems.

Should I build a team only from one element?

Usually no. Fire and Passion can reward matching placements, but most teams still need carry damage, range, SPA, traits, passives, and mode-specific utility.
